ODENSE ALMOND APPLE PIE

1 (7 ounce) package Odense Almond Paste
1 (9-inch) pie shell (frozen or home made)
5 baking apples (such as Granny Smith)
1/4 cup sugar
1 teaspoon ground cinnamon, divided use
FOR THE TOPPING:
1/2 cup all-purpose flour
1/2 cup uncooked oats
1/2 cup brown sugar
6 Tablespoons cold butter, cut in 1/2-inch pieces
1/4 cup chopped almonds

Preheat oven to 375 degrees F, with rack in middle.

TO LINE CRUST:
On a sheet of wax paper press the almond paste into a small disk. This will make it easier to roll out. Lay a piece of wax paper on top of the almond paste. Rolling out from the center of the disk, make it about 9-inches in diameter. Lightly press the almond paste into the pie shell.

TO PREPARE THE APPLES:
Peel the apples. Quarter and remove core. Cut apple pieces into thin slices and put in large bowl.

Mix together the sugar and half teaspoon of cinnamon, and toss together with apple slices. Add the apple mixture to the lined pie shell. It will mound up considerably.

TO MAKE TOPPING:
Mix together the remaining half teaspoon cinnamon, flour, oats, brown sugar and almonds. Using a pastry cutter or your fingers, cut the butter into the mixture until crumbs are formed. Pat the topping onto the pie.

Bake for 50-60 minutes, until crust is golden. Baking it on a parchment-lined cookie sheet will keep your oven clean.

Makes 1 pie, 8 servings
